Balfour

The Balfour is our signature cheese and consistently wins medals in the Cuisine Champions of Cheese awards. This hard-pressed cheese is matured to develop a sweet, nutty flavour and, being similar to a pecorino, is the perfect garnish on Italian dishes like risottos and pastas.

Unoaked Chardonnay or Pinot Noir | The vanilla and spice flavours will
accompany the sweetness and match the texture well.
The lower tannins should accommodate the fine grainy texture.
